An exciting and rare opportunity has become available for a Head Chef to assist with the provision of an excellent catering service within Ayr Clinic, with particular emphasis on the planning, preparation, cooking and serving of meals, ensuring all activities and operations comply with operational standards and statutory regulations.

The Ayr Clinic is made up of a well-established 36 bedded low secure hospital, and two specialised step-down facilities for men and women with mental illness and/or personality disorder.

The Ayr Clinic is situated in the coastal town of Ayr in West Central Scotland. Ayr Clinic is a Forensic Low Secure Hospital, Priory Group in Ayrshire, a distinguished facility dedicated to providing specialised care and rehabilitation for individuals with complex mental health needs within a secure environment.

About the Role

You will report to the Head of Facilities and together you will lead and supervise your team of Chef’s and Catering Assistants to ensure patients, staff and visitors are offered tasty and nutritious meals which are prepared to a high standard. You will have excellent communication skills, basic IT skills and be flexible and adaptable in your role.  We’ll expect you to listen, be kind and do everything in your power to help us hit the highest standards.

You will be supported by an experienced management team and together with your Catering Team you will ensure that the healthcare team are supported to deliver high quality care

As the Head Chef you will be leading the catering team, you should have supervisory experience and the applicable knowledge, training and experience listed below and the attached job Description:

Undertake the planning, preparation and cooking of meals, taking account of any special requests or dietary requirements within the unit.
Take full shift responsibility for the catering operation.
Ensure the cost-effective and efficient control of stock including placing orders for food products and the checking/reconciliation of deliveries. Ensure that wastage is minimised.
Researching and creating new menus ensuring meals are of a high quality and compliment healthy eating guidelines.
Supervise assigned catering staff ensuring their quality of work continues to meet required operational standards and the company’s Food Safety policies and guidelines
Organise and prioritise own work within established procedures, referring complex issues to Head of Facilities.

Knowledge, Qualifications & Training

Diploma in Hospitality and Catering Level 3 plus an Advanced Diploma in Food Hygiene Qualification as a minimum (or equivalent).

Knowledge of food Allergens & dietary requirements. (Specialist dietary training will be provided)
Knowledge of all aspects of Facilities Services with particular focus on Catering Services               
Knowledge of Health & Safety (training provided e.g. Introduction to H & S, Fire Safety)
Knowledge of C.O.S.H.H. Lifting and Handling, Infection Control practices, Food Safety Regulations, Appropriate Quality Standards, Continuous improvement, and awareness of HR policies and procedures
